Cuando paras por mas de una semana en un lugar, cuando haces de una mesa del Bar de la esquina tu mesa propia, cuando el mesero te llama por tu nombre, el almacenero te saluda cuando te ve cruzar la calle, cuando el portero de la calle de enfrente te comenta algo acerca del tiempo, es entonces cuando dejas de ser viajero y te conviertes en una parte del lugar, en un habitante.
Así hecho raíces, pero sabiendo que antes que la planta floresca ya habré cambiado residencia. Esto me esta pasando en BAKÚ. Una ciudad que no me conquistó como un amor a primera vista. Una ciudad que me obligó a descubrirle su encanto a la vuelta de la esquina. Una ciudad de 2 millones de habitantes, en su mayoría Azeris, pero también Rusos, Kasajos, Uzbecos, Europeos, Turcos, Persas. Todas etnías que ya ocuparan esta ciudad hace miles de años.
Ya dejo de visitar restaurantes en busca de sabores locales. Ahora pruebo a adaptar los ingredientes a mi cocina mediterranea habitual y uso las instalaciones del albergue. Viajeros nuevos que llegan, a la ausencia del propietario los recibo yo y les muestro las facilidades del hotel o aconsejo que visitar en la ciudad. No, no conozco todo de Baku, y tampoco quiero conocerlo. Me basta y me gusta lo que ya he descubierto. Para descubrir a los Bakelers, así el gerundio de los habitantes de la ciudad, basta sentarse el el umbral de la puerta, observar desde un balcón, meterse en un bar, observar la gente en la biblioteca nacional, en la cola del banco, en el transporte público. O escucharlos cantar. Dulces, pasionales, alegres. Hermosa gente los Azeris.
